Food... another recipe for the Asian flavour.
NASI LEMAK: the most important part of it is actually the sambal.
Honestly, I have no idea how to make sambal. I've tried once, didn't succeed. So i'm gonna copy some recipe I found somewhere.
But the rice... easy enough:
Nasi Lemak (THE RICE):
"You basically cook the rice as per usual. Except you don't use water. You use coconut milk aka santan."
How much santan to use? >>> "The same as you would use for normal rice."
You will probably be buying the packet type of concentrated LIQUID santan. DON'T buy the sachet/dry ones! They taste horrible!
You dilute the thick santan with water 1:1. If it doesn't seem to dilute well, simmer over fire while diluting it.
Add a dash of salt in the rice.
Other stuff:
ANCHOVIES --> Wash them and fry them till crispy.
CUCUMBER --> Raw and cool.
EGG --> As you like it.
PEANUTS --> buy those ready to eat type?
The SAMBAL:
You can choose to use Ikan Bilis or Shrimps - depending on the availability of the stuff.
Ingredients
100g ikan bilis , soaked and washed
3 tbsp oil
1 Large onion, sliced
2 tbsp chilli paste (can be obtained from oriental shop. If not, you have to blend dried chilli with some oil.)
Pound:
5 shallots
2 cloves garlic
1 stalk lemon grass, thinly sliced
1/2 tsp belacan granules (not a MUST)
Seasoning:
1/2 tsp ikan bilis granules (Not a must)
1 tsp sugar or to taste
2 tbsp lime juice
2 tbsp water
Method
Heat oil in a wok, saute pounded ingredients, chilli paste and belacan until fragrant. Add ikan bilis and big onions and stir-fry well.Mix in lime juice, water and seasoning ingredients. Mix well. Dish out and serve with nasi lemak.
